Overnight Oats with Beyond Greens and Udo’s Oil Granola

Ingredients

Overnight Oats 

300ml any plant Milk 

100g Gluten Free Oats, millet flakes and or brown rice flakes 

2 tbsp Chia Seeds 

1 tbsp Udo’s Beyond Greens 

1 tbsp honey 

½ tsp Vanilla 

¼ tsp Pink Himalayan Salt 

 

Granola 

60g coconut chips 

60g sprouted buckwheat 

20g sunflower seeds 

1 tbsp maple syrup 

¼ tsp nutmeg, grated 

½ tsp salt 

2 tbsp Udos Ultimate Oil Blend 

SERVES: 4 PREP TIME: 30 minutes SOAK TIME: 4-8 hours 

These overnight oats are laced with great things; Udo’s Beyond Greens within the oats and a wonderfully crispy granola painted with Udo’s Ultimate Oil Blend. Enjoy with fresh fruit and plant-based yoghurt in any season. 

METHOD:

Add all the ingredients to a medium glass jar or bowl and whisk with a fork. Leave to sit for a few minutes and then whisk again, which prevents the chia seeds from sticking together, repeat again if you have time for the optimum result. 

Place the overnight oats in a sealed container or into individual glass jars, in the fridge overnight to set. 

In the meantime, make the granola by preheating the oven to 160 degrees Celsius. 

Add the coconut and seeds to a bowl with the maple syrup and salt and spread the mix onto a lined baking tray. 

Bake the granola for 20 minutes until golden. 

Once the granola is crisp and golden take it from the oven and drizzle over the oil, tossing the granola and oil to make sure it is evenly covered.

Leave the granola to cool and then store it in a sealed jar until ready to serve. 

To serve; layer the set overnight oats with granola, fruit and yoghurt (optional) and enjoy cool.
